    Disney Rapunzel Tower of Pancakes Copycat Recipe

    You're about to have the best day EVER, thanks to this Disney Rapunzel Tower of Pancakes copycat recipe! This sweet stack of pancakes is found at the Bon Voyage Adventure Breakfast at Boardwalk Resort's Trattoria al Forno. Served with a seasonal fruit compote and your choice of sausage or bacon, this is a hearty way to start the day!

    These pancakes taste like typical, fluffy pancakes, but are about 4 times as thick! In order to achieve this 1 inch thickness without spreading, you have to use a stainless steel round cutter while cooking. Additionally, because the pancakes are so thick, you must cover the pan with a lid to ensure even cooking. It's almost like making a little birthday cake on your stovetop (queue the floating lanterns)!

    Unlike your typical pancakes drenched in syrup, these are preciously decorated with powdered sugar in the shape of a sun, a symbol of Rapunzel's Kingdom of Corona. This type of food art is similar to what you'd see adorning lattes, thanks to a simple stencil. You can buy a sun stencil on Etsy, but we chose to make our own. Disney Family website used to have Tangled golden sun templates for you to use at home, but they have since removed them. That is what we used for our pancakes. With that template removed, you might have to scour the internet to find an image or draw one on a piece of paper yourself. If you don't mind a piece of paper touching the top of your pancakes, you can cut out this pattern using a pair of kitchen shears. Even if you don't do the best job cutting out the template, it's pretty forgiving as a stencil for your powdered sugar sun.

    Keep in mind that Trattoria al Forno's Tower of Pancakes are buttermilk pancakes, whereas our favorite fluffy homemade pancake recipe from Life, Love, and Sugar (and the one used for this post), is not. Feel free to experiment with your favorite pancake recipe, especially if you eat gluten free. You might be pleasantly surprised with the results!     As mentioned above, the Tower of Pancakes at the Bon Voyage character breakfast are served with a seasonal fruit compote, which is a fancy name for fruit cooked in syrup. We've seen various forms of this served at Trattoria al Forno, from apple, to strawberry, to blueberry. If fruit isn't your thing, feel free to get creative with your pancakes. They taste pretty awesome plain, or with maple syrup, chocolate syrup, peanut butter...make it an adventure!

    Ingredients

    • 3 cups Pancake batter (Use the link for the awesome recipe we used from Life, Love and Sugar. This recipe makes 3 cups batter.)
    • 1 tablespoon Butter For greasing the pan.
    • Cooking spray

      --- Pancake Topping and Sides (optional) ---

    • 1/4 cup Powdered sugar
    • Fruit compote (Use the link for blueberry compote recipe.)
    • Bacon or sausage

      --- Special Supplies Needed ---

    • Tangled golden sun template (Find an image to print out on paper or draw one yourself, and cut out to make a stencil). We had previously linked to one we used from Disney Family, but they have since removed it from their website.
    • Wire strainer or sieve (For dusting the top of the pancake with powdered sugar.)
    • 4-pack Ateco 4.5'' round stainless steel cutters It's helpful to have at least 3 steel cutters so you can cook up 3 pancakes at a time.
    • Large frying pan* or griddle with lid. Ideally, your pan should be large enough to fit 3 stainless steel cutters at a time, with the lid fitting tightly on the pan. If your pan isn't large enough, bake the pancakes in smaller batches, and keep the cooked pancakes warm in the oven at 200 degrees Farenheit. *Also good to have on hand should ruffians try to steal pancakes.

    Instructions

    • Prepare the pancake batter.
    • Preheat the oven to 200 degrees Farenheit.
    • Preheat the skillet or griddle for a few minutes to one notch below medium heat.
    • Spray the inside of the round steel cutters with cooking spray.
    • Lightly butter the skillet or griddle with butter.
    • Put the round steel cutters in the skillet or griddle, sharp side up. You'll likely have to bake up the pancakes in a few batches, depending on your pan or griddle size.
    • Scoop 1/2 cup pancake batter into each round steel cutter.
    • Cover with a lid and cook 10 minutes.
    • After 10 minutes, the top of the pancake should have bubbles and look slighly dry and be pulling away from the round steel cutter.
    • Uncover, and using spatula(s), flip the pancakes to the other side. The pancakes should release from the sides of the steel cutter. If they don't, tap them with a spoon until the pancake releases and is touching the griddle.
    • Put the lid back on the pan and cook for an additional 5 minutes.
    • Use a spatula to take the pancakes out of the pan and remove the round steel cutters.
    • Repeat until all 6 pancakes are made. If you're cooking up your pancakes in batches, keep cooked pancakes warm in the oven at 200 degrees Farenheit.
    • Using the Rapunzel sun stencil and a sieve, dust one pancake with powdered sugar.
    • Stack the pancakes to form a tower, placing the powdered-sugar-sun-adorned pancake on top.
    • Serve with fruit compote and a side of sausage or bacon.
