    Caribbean Beach Mango Almond Tartlets Copycat Recipe

    This mango almond tartlets recipe is inspired by one of our favorite Disney World resorts: Disney's Caribbean Beach Resort! Fitting with the resort's tropical theme, the pastries are bursting with fresh mango, a satisfying crunch from sliced almonds, and topped with an addictingly sweet icing.

    Before Caribbean Beach's massive "re-imaging" (circa 2017), its Grab 'n Go bakery featured a variety of tropical pastries unique to the resort. This included pineapple muffins, guava cheese turnovers and danishes, and our favorite: mango almond tartlets.

    For so many years, trips to Disney World meant hopping out of bed and taking a sun-filled, morning stroll to Caribbean Beach's dining and shopping complex, Old Port Royale. Our morning could not start without a mug refill and TROPICAL PASTRIES. Needless to say, we were sad to see these pastries go.

    While we hope tropical pastries find their way back to Caribbean Beach (we noticed a guava danish on our last trip to Kusafiri Coffee Shop & Bakery, so all hope is not lost!), we're happy to have a version at home. Even better, this recipe is quick to make. There's no need to make your own pastry dough. When pre-packaged puff pastry is baked, it puffs up into irresistibly crispy layers of pastry.

    As you can imagine, we love these for breakfast. But they also make a super satisfying, light dessert.

    Servings: 8 Pastries (4" x 3.5" each)

    Ingredients

    • 2 frozen puff pastry sheets. We used Pepperidge Farm brand (17.25 ounce package).
    • 24 ripe mango slices. Peeled and sliced approximately 3" x .75" and 1/5" thick* and patted dry. It's important to thinly slice the mangos. If the mangos are too thick, they will weigh down the pastry and prevent it from cooking.
    • 2 teaspoons granulated sugar
    • 1 egg, lightly beaten
    • 4 tablespoons almonds, sliced
    • 1/2 tablespoon unsalted butter, melted
    • 1/2 cup powered sugar, sifted
    • 1/8 teaspoon vanilla extract
    • 2 teaspoons milk

    Instructions

    • Preheat the oven to 400 degrees Fahrenheit.
    • Thaw one puff pastry sheet according to the package directions. We thawed ours at 50% power in the microwave.
    • Line a baking sheet with parchment paper. Unfold the thawed puff pastry sheet onto the parchment paper and use pizza cutter to cut the dough into 4, equally-sized squares. Arrange the squares at least one inch apart from each other on the parchment paper.

    • Bake the puff pastry squares in the oven for 6 minutes. The dough should puff up in the oven.

    • Remove the puff pastry squares from the oven, then immediately arrange 3 mango slices down the center. It’s okay if the pastries shrink/deflate.

    • On the top of each pastry, coat the mangos with 1/4 teaspoon sugar and then brush the outer edges of puff pastry with egg.
    • Bake the mango-lined pastries in oven for 7 minutes or until the edges of the pastries are nicely browned (see photo below).
    • Remove from the oven and spoon 1/2 tablespoon of almonds in the center of each pastry. Let set on the baking sheet for at least 5 minutes before transferring to a plate or wire rack to cool.

    • Repeat steps 2 - 8 to prepare the other 4 pastries.
    • Once the pastries have completely cooled, make the icing. Whisk butter, powdered sugar, milk and vanilla together. Give the whisk a shake to see how well the icing drizzles off the whisk. If the icing is too thick to make a thin drizzle, whisk in a couple more drops of milk.
    • In a back and forth motion, use the whisk to drizzle icing over the pastries. If you love icing as much as we do, they taste better with a generous drizzle of icing. The pastries also taste best at room temperature the same day you make them. Enjoy!

      SO TASTY & EASY - THE BEST!

      Today I made these pastries for the third time and they are absolutely AWESOME! I always wait until the mangos are very ripe, but not mushy. These pastries are so delicious! You’re recipe is so easy to follow; I can’t thank you enough! Eating these brings back wonderfully fond memories of having breakfast outside at the Caribbean Beach’s Old Port Royale on a warm, sunny day!
